The Salmonella egg recall is staggering in its size. It certainly shows the strength and weakness of the American food system. This has to be one of the times in the history of the world that egg production has been concentrated enough to produce 500,000 eggs in such a short period of time. Unfortunately, it also shows how concentrated production can go really wrong.
