I am delighted to have my friend Gary McDonald speaking at The Chicago Farmers Farmland Forum 2015 on organic farming and organic farm leases. A lot of people understand the why of organic farming, far fewer understand the how of how exactly you could transition a conventional grain farm to an organic that can consistently sell the 20 Dollar plus soybean bushel.
Organic food demand is like China in that it grows every year. Maybe it will grown double digits--maybe in single, but it usually grows. So this means you are growing a crop that has an expanding demand curve, so you get to get a more stable price (usually). So this gives you a way out of the grain farming misery: When you got product, price is low, but when you get price, you probably don't have product.
So you at least have a shot of having both price and product to sell at the same time, and that my friends is a very good place to be.
